My sisters shared my sentiments, so Dad stood by and let the rest of us savor every piece. “Let me sample a leaf,” he finally murmured to my mother. Artichokes became a mainstay in our home after that.
They were frequently served with mayonnaise by Mom.
What could possibly be better, right?
For years, I serviced them in this manner.
Then I learned that they could be eaten with melted butter or even lemon butter.
For a real kick, my husband likes his with Wasabi mayonnaise.
Until lately, that is.
We both agreed that the Mediterranean Grilled Artichokes were wonderful without anything extra when I cooked them.
So, here’s my new… Artichokes cooked and served in a lower-calorie, healthier manner.
The greatest part is that they are quite simple to create.

Grilled Artichokes in the Mediterranean Style
Artichokes may seem scary at first, but don’t let that deter you.
Rinse the artichokes completely beforehand.
Cut 1/2 inch off the tips and 1 inch from the stems using a sharp knife.
After that, remove all of the thorns from the artichokes.
Then, vertically split them in half and scrape away the fuzzy and feathery choking, leaving just the leaves and that wonderful heart.
I used to do this with a spoon, but I’ve found that a melon baller works much better.
Because the flesh of an artichoke soon turns brown when exposed to air, massage it with a sliced lemon.
Then, in a steamer over 2″ of water, place the cleaned artichoke halves. Cover and steam for 25-30 minutes, or until a leaf easily peels away.
Then, on a plate, combine the olive oil, lemon juice, and oregano, thyme, rosemary, and garlic salt, as well as the Mediterranean spices oregano, thyme, rosemary, and garlic salt. To incorporate the spices, swirl with a spoon.
Then, cut side down, place the heated artichokes on the platter to soak up all of the amazing spices, then turn them over to flavor both sides.
Finally, turn your Griddler up to its highest setting. Close the cover and add the artichokes.
They’ll be nicely grilled in 4-5 minutes.

In a steamer, place the trimmed artichokes over 1 1/2″ to 2″ of water. Steam for about 25 minutes, covered.
On a dish, combine the olive oil and 1/2 lemon juice. Then, using a spoon, stir oregano, thyme, rosemary, and garlic salt into the olive oil/lemon juice combination to ensure that all spices are properly incorporated.
Heat the Griddler and place the steamed artichokes cut side down on the platter.
Add the artichokes to the heated Griddler and shut the lid. Cook for 4-5 minutes, or until grill marks develop on the surface.
